CASSEROLES AND HOT DISHES


Tuna Pinwheel


2 cups Bisquick              Dash of pepper            

1/2 cup cold water           Milk

2 cans of tuna               1/2 teaspoon lemon juice

1 small onion, chopped       1/4 cup parsley flakes

1/2 teaspoon salt



Mix Bisquick and water to a soft dough and beat 20 strokes.  Roll dough

to 1/4 inch thickness on floured board.  Combine tuna, onion, salt, pepper,

lemon juice and parsley flakes.  Moisten with milk, mix well and spread on

dough.  Roll as a jelly roll and bake on a greased cookie sheet at 400

degrees for 30 minutes.  Serves 6.  Serve with following sauce.



Sauce:

2 tablespoons butter         Dash of pepper

2 tablespoons flour          1/2 cup grated cheese

1 cup milk                   1 beaten egg

1/2 teaspoon salt            1 small can of peas



Melt butter, remove from heat; add flour and mix until smooth.  Add milk

and cook until thickened, stirring occasionally.  Stir in cheese until

well blended.  Remove from heat, add salt and pepper.  Just before serving,

stir in egg and peas.
